Great for Passover, gluten free diets, and just for all that love chocolate!

One of History’s Most Fortunate Mistakes – The Italian Torta Caprese

6 ounces bittersweet chopped chocolate (recommended 60 percent)

12 T Unsalted Butter 

Melt these two ingredients in the microwave

Stir and add 1 teaspoon of vanilla 

4 Eggs Separated

Whip 4 Whites with a 1/2 C of sugar slowly with mixer running at high speed (4 minutes to glossy peaks) Set Aside

Whip 4 Yolks with 1/2 Sugar all at once for 3 to 4 minutes till light and fluffy

Fold in chocolate mixture into the yolks 15 secs medium speed

2 Cups Almond Meal or Almond Flour plus 2 T Dutch Coaca 1/2 t Salt added, and add to the chocolate mixture and blend till incorporated

Add chocolate mixture to egg whites as the video demonstrates

Bake in a 9 inch greased springform 325 degrees for 50 minutes

Cool, powder, and enjoy!
